You will need a 200g sterilised airtight jar
Ingredients:
75g carrots coarsely grated
1 tsp raisins
1 tsp freshly grated ginger
¼ tsp ground mixed spice
2 cardamom pods, seeds removed and ground
Grated orange zest, 1 tbsp fresh squeezed orange juice
75g runny honey
Method:
Mix grated carrot, raisins, ginger, ground spice and cardamom in a bowl. Add orange zest to you tasting (add a bit and try, then add more as preferred). Pack the mix into the jar. Pour the honey over the mix into the jar so it covers everything and fills the jar, stir carefully to mix then add remaining honey but do leave a gap at the top to keep some air in the jar for the fermenting process.
Cover the jar but do not seal the lid at this stage. Stand on a plate at room temperature for a week – , it will bubble over slightly. Wipe down the jar, (sorry it may be bit messy!) then seal with airtight lid and store in fridge up to 6 weeks keeping contents submerged in honey.
Use on toast, to top a carrot cake, to pimp up a salad or anything else you think might work!
