At the beginning of April, just before Easter, I was lucky enough to be invited along to the Pure Patisserie Bake School’s soft launch of their Cake decorating Master Class!
By the end of the class you will get to go home with a three layer, fully iced and decorated vanilla sponge cake! I couldn’t believe I could make sure a beautiful cake! Every year I make birthday cakes for family members, and they always come out looking wonky, but made with love. This cake is another level and I was so proud of my creation by the end of the day! I learnt so many new baking tips throughout the day which will stay with me forever!

Pure Patisserie is run by professional pastry chef Sophie Lewis. Sophie gained a wealth of experience working in luxury hotels and high end restaurants, including three different Michelin starred restaurants.
Sophie’s most recent role before starting her own business was that of Senior Pastry Chef at the Michelin starred restaurant in Claridges in Mayfair London. As well as running the busy section, Sophie’s role at Claridges included designing her own innovative desserts.
In February 2019 Sophie established her own business “Pure Patisserie” baking from her fully equipped kitchen in Buckingham
The Bake school can be found in Pure Patisserie’s brand new home on Castle Street in Buckingham Town Centre. The space is light and roomy, and the perfect place to learn to bake.

When you arrive you are all given an apron to put on and have to wash your hands before you can begin. At each station is your own kitchen aid mixer that you can use to make your buttercream. I instantly realised I need to have one of these in my life, so messaged my husband to put it on the list for my big birthday next year! In fact as the day goes on I soon realised I need to add a few more important tools to my baking drawer!
I find baking very relaxing and therapeutic, so spending all day at the Pure Patisserie Bake school was heaven to me! I loved learning how to use baking tools properly, and also learning some trade secrets from such a professional! There really is an art to assembling and icing a cake so beautifully, and Sophie was on hand throughout the whole experience to help you get it just right (it is all in the angle!)
During the day you learn:
how to assemble a three layer vanilla sponge cake
how to make silky smooth American buttercream to perfection
how to ice and finish a 6inch sponge cake
how to achieve a sharp edge or rough edge effect
how to layer buttercream
how to dip decorations for your cake

I would recommend wearing flat shoes as when you are icing the tricky bits you can be on your feet for a while.
Lunch is provided and is from the fabulous guys at Cornwall Place Kitchen.
At the end of the day you get to take your beautiful creation home, as well as the recipe and a branded Pure Patisserie wooden spoon to further your baking journey!
